L'Extreme 2020 (llum de lluna)
The grapes were hand picked from 60-year-old vines grown on steep, north facing slopes in schistose marl soils. Destemmed without crushing, given one week of pre-fermentation maceration and basket-pressed three days after fermentation. Fermentation and malo-lactic conversion was completed in inox tanks, then further aged without any movement. Bottled in 2021 without fining or filtration.
Rich and full on the palate with dominant black fruits and cooked spices. A long and structured wine. Tannic. Serve at 16-18 degrees and decant ideally thirty minutes beforehand. Drink with red meat, grilled vegetables and/or charcuterie.
