Manually harvested from sandy clay soils on the River Cher’s left bank in France’s Loire Valley. Vinification is slow and natural. Yield’s are controlled. Fermented with indigenous yeasts. Steel tanks used for maceration until the end of Alcoholic fermentation. Organic and unfiltered. Equal measure of spicy pepper and dark wild fruits and quiet tannins. Pull the cork and prepare the charcuterie.
