Carousel 2021 - Tintilla from Giostra
100% Tintilla from vines sitting 600m above sea level. Destemmed gently by hand and fermented for 6 days on skins, then pressed to sit in steel tanks to finish fermentation for 4 months. No filtering or fining and minimal sulphur additions, if necessary. A certain smokiness prevails. Ripe dark fruits like blackberry, plum and black cherry; earthy with a little spice. Fine tannins with an acidic backbone. A great one for the table when grilled or stewed red meats are served.
